Here’s my Blackened Salmon
I made the salmon in a cast iron pan, but any thick bottomed pan will work.
Use enough oil in the pan to coat bottom of entire pan.
1/2 tbsp – #flavorgod pink salt and pepper
2 (8 ounce) pieces salmon, bones removed, skin-on
2 tbsp – #flavorgod spicy or any flavor
3 to 4 tablespoons – oil (with a high smoke point)
2 lemons, zested and juiced
1.Sprinkle salmon fillets heavily with #flavorgod spicy seasoning and lightly with #flavorgod pink salt and pepper. Cover flesh completely, Only on the flesh side. Leave the skin on the other side alone.
2.Heat a large heavy-bottomed pan or cast iron skillet over medium heat, and add the oil. When the oil begins to smoke turn heat off under the pan. Add the salmon, 1 at a time, imflesh side down, in the oil. Turn the heat back on under the pan and cook for 3 minutes. Use a spatula to turn the salmon to the other side. Cook the salmon over medium heat, until the skin becomes crispy, about 5 to 6 minutes.
Place salmon fillets on on plate and garnish with fresh squeeze of lemon juice and lemon zest.
