The most glorious breakfast/brunch/lunch dish, ever! Potato waffles with avocado, cheddar cheese, fig, cilantro and Sriracha sauce. Recipe below:
1 lbs of baking potatoes, peeled and grated (squeezed out the excess water)
1 egg, lightly beaten
1 tsp salt
2 tbsp all-purpose gluten-free flour
1/2 baking powder
Mixing everything together, until well combined. Let it sit for about 15-20 mins. Pour the batter into the waffle iron and bake them based on manufacture instructions. Place the cooked potato waffles onto a baking tray. Spread over some cheddar cheese or other kinds of melting cheese. Baking in a preheated (400 F) oven, for about 10 mins until the cheese is melted. Then take it out. Add avocado wedges, cilantro, salt, pepper, figs. Drizzle some sriracha sauce and then dig in!
