Thanks to @jesssriv, I’ve been waiting to make this diiiiiiirty [you know when something looks like proper grub? ] looking meal all day! sometimes the messier the better right?
we got: ✌ lightly toasted @bionaorganic rye bread, topped with a sweet soy veggie egg scramble
and see that little blob of hummus? PEANUT BUTTER HUMMUS so many of you asked for the recipe, so here it is:
1 400g can of chickpeas [microwave for one min then rinse. thanks for the tip @nicolajanehobbs]
5 tbsp olive oil
1 tbsp date syrup
juice of 2 lemons
2 tbsp tahini
1 tbsp apple cider vinegar
10 tsp @thatprotein peanut flour
1 heaped tbsp @meridianfoods pb
salt & pepper
put it all in a food processor [I use @ninjakitchenuk duo bowl model ] blend until smooth! If it looks really thick, add 1 or 2 tbsp of water as I find when it goes in the fridge, it thickens up more.
