SWEET POTATO HASH BROWNS, SPINACH & PANCETTA BREAKFAST

Simple and hearty one skillet breakfast featuring @flavorgod CHIPOTLE Seasoning.
3 ounces sliced pancetta
1/2 cup diced onion
4 cups raw shredded sweet potato (we used 1/2 white-fleshed and 1/2 yam)
2 cups fresh spinach
Flavor God CHIPOTLE Seasoning
Salt and pepper to taste
In a large skillet over medium heat, fry pancetta and set aside. Keep 2 Tbsp of fat in the skillet.
Add diced onion and salt and pepper to taste. Sauté 2-3 minutes. Next add in the shredded sweet potatoes. Season liberally with Flavor God CHIPOTLE Seasoning. Turn mixture over occasionally, allowing potatoes to brown – about 10 minutes. Stir in fresh spinach and cook just until leaves are slightly wilted.
Fry eggs. Plate hash browns with egg on top and pancetta to the side. Enjoy!
