Superfood Chocolate Chip Cookies, with chia & kale, packaged in my favorite @fullcirclehomellc Ziptuck reusable and eco-friendly storage bags.
1 cup spelt or oat flour
1/2 tsp baking soda
1/4 tsp salt
2 tsp chia seeds
1/2 cup unrefined sugar
1/3 cup chocolate chips
2 tbsp milk of choice
2 tbsp oil
1/4 tsp pure vanilla extract
1 cup raw kale or spinach, no stems
Process greens or dice extremely finely. Preheat oven to 325 F. Stir together all ingredients to form a dough. Roll into balls. Place on the tray and bake on the center rack 11 minutes – they will look underdone, so let them cool ten minutes before handling. Nutrition facts are on the blog @chocolatecoveredkatie .
I try to be environmentally conscious as much as possible so was really excited to discover the Ziptuck reusable storage bags as an eco-friendly and BPA-free alternative to single-use plastic bags. They come in five different sizes, can be used anywhere you’d use regular plastic bags, and they are both dishwasher and freezer safe. If you want to learn more, please feel free to check out their website: http://bit.ly/2eZi0bh (Note: I don’t make any money if you purchase from them; I just really believe in the product.)
