saturday fake-hooray-away.. YAY well.. half a fakeaway because I doubt your local Chinese takeaway does avo & poached egg BUT.. the flavoursome veggie soba noodles underneath definitely remind me of chow mein If you’ve never had a Chinese takeaway, screw this & treat yo’self because let’s face it, nothing beats a real takeaway then come back & try this!
for the veggies:
1/2 c chopped mixed bell peppers
1/2 c chopped zuchinni chunks
1/4 c chopped red onion
1/2 c chopped chestnut mushrooms
In a frying pan with 1/2 c boiling water & 1 tbsp @lkkeurope soy sauce, chuck in the bell peppers, zuchinni & red onion • when that’s nearly done add in the mushrooms until all the liquid has absorbed • sprinkle on 1 tsp of vegetable stock powder (I use Marigold Swiss) & give it a mix.
for the noodles:
boil 55 g @kingsobanoodleculture soba noodle in about 1 1/2 c water, 1 tsp of crushed dried herbs, salt, pepper & 1 @saykallo vegetable stock cube.
once everything is done, mix it all together, chuck in a bowl & top with a seriously ripe avo & runny poached egg what’s your favourite cuisine to experiment with?
