New obsession – turmeric. It makes pretty yellow rice I recently found out that it is more beneficial to eat with black pepper (what a shame ) but I’m pushing through . This weeks lunch creation – a Sri Lankan spiced vegetable curry.
Serves 4
Curry
Put into a saucepan:
6 potatoes (I used King Edward), chopped into small ish pieces
1 tbsp tomato paste
1 can chopped tomatoes
1.5 cans worth of water
1 tbsp curry powder (I used a blend of coriander, fennel, cumin, fenugreek, black pepper, cloves, cassia, chilli)
1 tbsp curry leaves
Pinch of pink salt
Bring to the boil and simmer until potatoes are cooked
Take off the heat, then add:
1 can chickpeas
1 chopped pepper
2 chopped carrots
Handful chopped mangetout
Brown rice:
Cook as usual, adding :
1/4 tsp lemongrass powder
1/2 tsp of turmeric
Once cooked, stir through 1 tbsp shredded coconut and some black pepper
