Salad is approx. 1 c. shredded carrots, 1/2 red pepper, 3/4 c. raisins, 3 champagne mangoes, 3/4 c. raw cashews, 1/4 c. onion, a splash of olive oil, curry powder and cayenne. Dressing is a purée of coconut milk, 1 champagne mango, a small piece of garlic and ginger, 2 TBS lime juice, sea salt. 4.) Toss together and wrap it up!
