If there’s one ingredient I could eat every single day and never tire of, it’s sweet potato. There’s just no end to its versatility! On the blog you’ll find it in everything from savoury loaded baked potatoes, chana masala, pizza to even chocolate truffles, cookies, ice cream and, very soon, this sweet potato and blueberry pie I made this afternoon ☺. The only thing you won’t see me use it for is toast – that abomination is just an insult to bread . When the inevitable sweet potato shortage rolls in, I will take full responsibility!
