I made you a weeknight-friendly, labor-day-ready veggie burger! A dump and blitz in the food processor, quick bake, layer of juicy tomato, avo, red onion, spicy mustard and wrapped in some butter lettuce. Quite simply one of my favorite meals…ideally with sweet potato oven fries ☺️Recipe below. —
Oven to 400′. Grease a parchment lined baking tray.
1/3 c oats
1 garlic clove
1/4 of a small yellow onion, chopped
1/2 tsp. sea salt (all pulsed in a processor to a coarse meal, then add )
1 cup leftover brown rice
1/2 cup white beans
8 ounces mushrooms (chopped, sautéed and cooled)
1 Tbsp. olive oil
handful of parsley
few dashes of cayenne and pepper
(Pulse a few more times to mix but do not purée. Form 1″ thick patties and bake for 15 minutes. Assemble and yum!)
