I made vegan French toast yesterday morning & posted a picture on my IG story and got so many people asking me for the recipe that I thought I’d share it here too:) My mom used to make it all the time when I was a kid (in French, it’s called “pain perdu”, which translates to “lost bread”). For the vegan version, I used aquafaba (the liquid from a chickpea can) instead of eggs, blended with soy milk (instead of dairy), vanilla extract, a pinch of turmeric (for the color) and kala Namak (which means “black salt”, it’s the most important ingredient, as it’s what makes it taste like egg). Cinnamon would be nice in this too! The bread is rye bread (beware of hidden eggs, honey and dairy in bread, always read the ingredient list). I let the bread marinate in the “egg” mix for a couple of minutes and then cooked/ fried it in a pan at high heat with coconut oil. Served (and by served I mean “drowned in”) with maple syrup and fresh berries. The plate is handmade by the adorable @jonathancastrodesigns
