MEXICAN STUFFED SWEET POTATOES
Spuds loaded with spicy goodness featuring FLAVORGOD TACO TUESDAY and HABANERO seasonings, with ground beef from @5280meat.
2 Tbsp olive oil
3/4 lb ground beef or turkey
1/2 medium yellow onion, diced
1 Tbsp tomato paste
1/2 bell pepper, diced and seeded
4 ounces of canned mild green chilis, chopped
2 Tbsp FLAVORGOD TACO TUESDAY seasoning
1/4 tsp to 1/2 tsp FLAVORGOD HABANERO seasoning
1/2 cup salsa or pico
1/2 cup guacamole
1/4 cup black olives, drained and sliced
1/3 cup chopped scallions
Salt and pepper to taste
Optional garnish: chopped scallions, cilantro
Bake medium-size sweet potatoes in 400º F oven for about 45 minutes, or until tender. —
While potatoes are baking, make the stuffing mix: Add olive oil to a stovetop skillet and heat to medium. Sauté bell peppers and onions 3-4 minutes until tender.
Next add ground beef or turkey. Season with FLAVORGOD TACO TUESDAY and HABANERO seasonings. Stir to combine.
When meat is cooked through, add tomato paste. Simmer 3 minutes and remove from heat. —
Halve baked sweet potatoes and scoop out some potato from the center of each. Fill with mixture. Top with fresh pico or salsa, guacamole and scallions.
