Bringing back Sunday dessert day with a lime tart SO EASY. And made with an unexpected ingredient – silken tofu (so its high in protein too ) Recipe
1 cup oats, blend into a flour
1/2 cup almonds, blend into a flour
6 medjool dates
2 tbsp cacao powder
1-2 tbsp water, if needed
Blend until sticky. Put into the bottom of a loose-bottom tart tin. Probably makes too much, so roll the rest into balls for snacking later
1 packet silken tofu
Zest of 2 limes
Juice of 3 limes
2 tbsp icing sugar (add more if you want it sweeter)
2 tbsp coconut cream (optional – but extra creamy)
Blend until smooth. Pour onto base. Put into fridge to set – takes about 1-2 hours to firm up.
I decorated with the zest of 1 more lime. And some lavender flowers ✌
